As we are all confined to our homes or apartments during the Coronavirus (COVID-19) outbreak, I wanted to give you a rundown of the 5 best Tiny Kitchen recipes for this time of social distancing.

Spaghetti and Clams
This one is great because it is an easy, easy, easy recipe! Plus, it’s perfect because you can stock up on both the Spaghetti and the cans of Clams and keep them in your pantry until you’re ready to use them. When you are, just boil the pasta, drain it, and use the same pan for the sauce. No sense in dirtying up another pan.
If you don’t have fresh Parsley or you can’t find it at the grocery store (the shelves are a bit bare these days), that’s OK. You can make it without in a pinch. As a substitute, if you have a lemon, grate some of the zest on top of the finished pasta. It will bring some of the freshness to the dish that parsley normally would.
Also, feel free to substitute granulated garlic or garlic powder for fresh garlic.

Juicy and tasty BBQ Chicken! I love this recipe…and it is perfect when you’re caught indoors. I never thought when I was first making it that it would be equally as good during a pandemic as it would in the middle of winter. Who could have ever imagined???

Instant Pot BBQ Brisket
Longing for the outdoors must be the reason for selecting two BBQ recipes that are perfect when you’re Social Distancing and stuck at home under a Stay at Home order. I guess it makes me think of sunshine and the open range and riding my horse into the sunset. Wait, I don’t have a horse…I’m caught in another daydream as I gaze out the window.
In all seriousness, this one is a real treat, even when you’re not stuck at home…but, especially, when you are. So easy to make, the Instant Pot does all the work to make this Brisket super tender and super tasty. Serve it alongside some canned beans and Beer bread and you’re set!
If you don’t want to take the time to make the BBQ Rub or you can’t find all the spices, that’s no problem. Just pick up some BBQ rub at the store. It will work perfectly at time like this!

A Tiny Kitchen Classic, this Beer Bread is perfection and so versatile! I mentioned serving Beer Bread alongside the Instant Pot Brisket and it made me think how perfect this recipe is as we get through this time. Plus, when I went to the grocery store, they were all out of bread.
So…make your own bread! You can do this!
Three ingredients, that all it requires. Self-rising flour, sugar and beer. One hour and you’ll have yourself a warm and toasty loaf of bread. This Beer Bread is great in the morning for your Avocado Toast or just slathered with butter and jam. It makes a great sandwich, too, and toasts up perfectly! Serve it alongside a great dinner

Chick-fil-A Orange Chicken
So you’re not finding anything good at the grocery store. No worries. Chick-fil-A is still open and you can whip up this creatively different recipe for Orange Chicken using ingredients that you can get at your local Chick-fil-A. The only other thing you’ll need is a packet of soy sauce…and, if you’re anything like me, you have one of those lying in your pantry or in that kitchen drawer. You know the drawer. Serve it over some rice and you’re set! (I like to use Uncle Ben’s Ready Rice…:90 seconds in the microwave and easily storable in your pantry!
