I’ll be honest — I kept Cajun seasoning that I got from Applebee’s when I worked there in a recycled gray plastic spice jar for longer than I care to admit. It was so good, and eventually that gray plastic spice jar was empty.
Then, one day, I did a little research about what typically goes into cajun seasoning and thought… I have all of these in my spice cabinet right now. Like, all of them. Turns out making your own Cajun seasoning takes about two minutes, costs almost nothing, and tastes even better than anything that comes in a recycled gray plastic spice jar — mostly because I get to control the heat.
Want it spicier? Add more cayenne. Cooking for someone who thinks black pepper is adventurous? Dial it back. This is the seasoning I use in my Fried Pickles and honestly it’s one of those things that once you make it yourself, you’ll never go back to the store-bought version. Make a batch, keep it in a jar, and use it on everything.
