Mama Fucci’s Spinach Lasagne Roll-ups

This one is dedicated to Mama Fucci, my Mom.  Hey, it’s her recipe…it’s the least I could do.  Not to mention, she is the most amazing woman in the World…so that plays in to it too.  And, she’s a fantastic cook to boot!

This recipe of hers is one of my most favorites of all time and when I was crafting recipes for Tiny Kitchen Big Taste, this one was tops on my list!

Mama Fucci can definitely handle the heat!

From kids to catering, this recipe runs the gamut.  This is, single-handedly, one of THE most versatile recipes you will ever make:

Cooking for one?  It works!  You can make them in individual portions…and freeze them.  Pull ’em out whenever you’re hungry.  I’m hungry now!

Want to have your kids help out?  It works!  They’re not my kids, but they’re still having fun!!!  Even Auntie P thinks it’s great to get the kids involved.  She might also be wondering, “who is this strange guy in my kitchen with the hippity-hop backwards hat and why is he using one of my clean dish towels?”

Only have kids of the four-legged variety?  It still works…they’ll just be staring at you waiting for you to drop a tasty morsel.  Yum.

Vegetarian?  It works!  Spinach is a vegetable…although it’s not as into aerobics as carrots are.

Meat Eater?  It works…just substitute pepperoni and cooked ground beef for the spinach!  It will have meat eaters across the Globe dancing a jig!

Work long hours?  It works!  Like I said, you can make these in advance and cook ‘em up just like a microwave dinner…only they’re soooo much better.  Freeze some extra sauce in Ice Cube trays…now you’re thinking!

On a Budget?  It works!  You can make this one on any budget…and it’s much cheaper and tastier than eating out!  Who doesn’t like to save a couple of bucks?

Like I said, this is one of the most adaptable recipes you’ll ever try!  Plus. they’re fancy to look at and so flavorful!  Promise me you’ll thank Mama for it!

P.S.  For all you wondering, Lasagna is singular, Lasagne (as in, more than one roll-up) is plural.  At least that’s what Wikipedia told me! 😉

Mama Fucci's Spinach Lasagna Roll-ups

Traditional lasagna is so last year.  Mama Fucci’s Lasagne Roll-ups are what’s hip to the groove…unlike the term “hip to the groove.”  Make Mama Fucci proud and give these vegetarian roll-ups a try!

Ingredients

SO WHAT YOU'RE GONNA NEED IS:

  • 2 cups Tiny Kitchen Basic Tomato Sauce
  • 2 cups Ricotta Cheese
  • 3/4 cup Mozzarella Cheese (shredded)
  • 2 Tablespoons Parmesan Cheese (grated)
  • 8 ounces Frozen Spinach
  • 1 Egg
  • 1/2 teaspoon Pepper
  • 1/4 teaspoon Nutmeg
  • 8 Lasagna Noodles
  • Olive Oil Cooking Spray

YOU'LL ALSO NEED:

  • Large pot
  • Tongs
  • Mixing Bowl
  • Mixing Spoon
  • Silicone Spatula
  • Baking Dish
  • Baking Sheet
  • Measuring Cups
  • Measuring Spoons
  • Aluminum Foil (optional)

Instructions

  • Heat oven to 375 degrees. Spray baking dish with non-stick cooking spray (or olive oil)
  • Cook Lasagna noodles until pliable. Do not fully cook. Strain and set aside individually on preparation table so that they do not stick together. You can also spray with cooking spray (olive oiif you want to ensure they do not stick together or to the table.
  • Drain excess water from Ricotta cheese. Thoroughly squeeze out water from thawed spinach.
  • In a bowl, whisk egg. Combine with Ricotta Cheese. Add, spinach, pepper and nutmeg. Mix thoroughly.
  • Place 1/3 to 1/2 cup filling on each of the lasagna noodles and spread evenly. Beginning at one end, roll-up the noodle. Place seam-side down in oiled baking dish. Repeat until the desired number of noodles are made.
  • Cover roll-ups with Basic Tomato Sauce. Cover baking dish with aluminum foil. Bake 40-45 minutes or until cheese is melted throughout.
  • Top with mozzarella cheese. Cook another 10 minutes. Enjoy!
