One Minute Cobbler

Cobbler.  Just the mention of the word brings a huge smile to my face.  It’s seriously one of my most favorite desserts.  Any kind of fruit, I’m not picky…raspberries, blackberries, cherries, blueberries, peaches, you name it.  Heck, even combine a couple of them…you won’t hear me complaining.

Thinking about topping the warm cobbler with some vanilla ice cream makes me seriously consider skipping the main course and going straight to dessert.

Even though it’s one of my faves, I never used to make it.   Why?  I think because it was so incredibly tasty, I always equated it with something that took a lot of time and was super complicated.  That couldn’t be farther from the truth.

Literally: 4 ingredients and your fruit of choice.  That’s it!

Not only that, you can whip it up in about a minute (thus, the “One Minute Cobbler” moniker) and then, 30 minutes before you’re ready to have warm homemade cobbler, just pop it in the oven.

That’s one of the best parts of this recipe: you can make it all in advance and pop the personal-sized cobblers in the fridge until you’re ready to use them.  It’s a good idea to take them out of the fridge for 15-20 minutes before baking…that will bring the cobblers up to room temperature to ensure it cooks through.  What I usually do is take it out of the fridge when I start making dinner.

Despite its versatility and simplicity, the results are incredibly satisfying!  The cobbler itself is not overly sweet and the underside of the crust takes on the fruit flavor that has been cooked into the creation.  The golden brown crust on top is crunchy, sweet and caramelized.  I could go for a whole pan of crust…it’s that good!

I have made the One Minute Cobbler with a variety of fruits.  Some work a little better than others, but they all taste fantastic!  Blueberries and cherries tend to be much more dense and so it tend to settle to the bottom a bit more than the other fruit which remain more suspended in the cooked cobbler.  Raspberries, blackberries, marionberries, and peaches seem to produce the best results.  But in a pinch, you can use pretty much anything.  I’ve used raspberry preserves in the past and had success.  Like the blueberries and cherries, preserves are more dense and sink to the bottom.  Still, the flavor is there, the amazing cobbler is there…and in a pinch, you’ve ensured that a scrumptious dessert is there!

One Minute Cobbler

Ingredients

SO WHAT YOU'RE GONNA NEED IS:

  • 2 Tablespoons Butter
  • 1/2 cup Sugar
  • 1/2 cup Self-Rising Flour
  • 1/2 cup Milk
  • 1 1/2 cups Raspberries
  • 1 1/2 cup Blackberries

YOU'LL ALSO NEED:

  • Mini Ceramic Crocks
  • Baking Sheet
  • Silicone Baking Mat (optional)
  • Mixing Bowl
  • Whisk
  • Silicone Spatula (optional)
  • Measuring Cups

Instructions

  • Melt Butter in Mini Ceramic Crocks/Ramekins in microwave until melted (usually less than 30 seconds)
  • In Mixing Bowl, combine, Sugar, Self-Rising Flour and Milk. Whisk until batter is thoroughly mixed.
  • Once Butter is melted, pour batter evenly into Crocks.
  • Add Berries
  • Bake at 375F until nice and golden brown!
