Dad's Award Winning Chili

This beauty got first prize in the NASA Johnson Space Center Annual Chili Cook-off.  Government-tested.  Astronaut-approved!  It's out of this World good!

Ingredients

Prepare the Vegetables

  • Roughly chop Green Pepper into bite sized pieces.
  • Chop Onion.
  • Roughly Chop Cilantro.
  • Finely mince Jalapeño Pepper
  • Press Garlic

Prepare the Meat

  • Season both sides of the Top Sirloin liberally with Salt and Pepper
  • Cut Sirloin into cubes.

Take it all to the Stove

  • Add Olive Oil to a Dutch Oven over medium-high heat.
  • Add Sirloin and sauté until browned. Remove and drain off excess fat.
  • Add a little more Olive Oil (if necessary) to Dutch Oven.
  • Add Green Pepper, Onion, Garlic, Salt and Pepper. Cook until vegetables soften.
  • Add Sirloin back in.
  • Add Oregano, Cumin and Chili Powder. Sauté for about a minute
  • Add Beef Broth, Diced Tomatoes, Tomato Paste, Sugar, Jalapeño and Cilantro. Bring to a boil.
  • Cover and turn stove down to medium. Let simmer for at least an hour. (Longer will allow the meat to become more tender)
  • If desired, add Beer and let cook for at least 15 minutes.
  • Serve it up. Garnish with Parmesan cheese if desired. Enjoy!
