Frico (Stove Method)

You can’t get more basic than one ingredient…especially when that one ingredient is Cheese.  Now, crisp that cheese perfectly and you’ll redefine it.  The recipe: Simple.  The results: Sophisticated. 
The Stove Method is great for the most delicate of Frico.  Use this method when serving on its own as an Appetizer or with wine.

    Instructions

    • Sprinkle finely grated Parmigiano Reggiano Cheese in a 2-3 inch wide strip across the diameter of a Frying Pan.
    • Using a Silicone Spatula, push any outlying cheese towards the strip to create a relatively clean edge of Cheese.
    • As it begins to brown on the edges, lift the short edge of the Cheese with the Silicone Spatula and peel the strip of Cheese off the Frying Pan using pointed Tongs or Tweezers.
    • Flip and cook for a few moments more.
    • Remove and place over rolling pin (or something similar) to cool
