SO WHAT YOU'RE GONNA NEED IS:
Peel potatoes if desired. Cut potato lengthwise into 1/4 inch slices. Place slices flat on the cutting board and cut into 1/4 inch French Fries
Place French Fries in large bowl of water and rinse them repeatedly until the water is clear
Thoroughly dry the French Fries (Note: make sure they are completely dry)
Heat Large Pot of Vegetable Oil to 300°F. Working in small batches, place French Fries in the oil for about 4 minutes until tender. (Note: if they start to turn brown, the oil is too hot.) Remove and place on paper towels or paper grocery bag. Continue to work in batches until they are all cooked.
Turn up the oil to 400°F. Working in small batches, place French Fries in the oil until they reach the desired color. (Note: they can cook fast).
Remove from the oil and place on paper towels or paper grocery bag. Salt/season immediately.
